Chef Ivan Tisdall-Downes starts serving squirrel lasagne and pies at his restaurant in London

The former River Cafe chef said diners were turning to sustainable food from animals which would have been culled.

The UK’s five million grey squirrels are seen as pests as they threaten endangered reds.

Ivan, who runs Native near London’s Borough Market, claims the meat tastes like rabbit.

More and more people are conscious of their carbon footprint and the damaging additives put in their food.”

Kevin Tickle also serves squirrel at his Michelin-starred Lake District restaurant The Forest Side.

He said diners “find it quite exciting”.
